Sweet Potato Hash Bites (cookies)


We created this recipe after wanting to use sweet potatoes for their Vitamin A & C, Potassium, Fiber and reducing inflammation properties.

We love coconut oil because it contains medium-chain triglycerides (MCTs), which are quickly converted into energy and can be used by the brain as an alternative fuel source.

We paired these two together for a quick convenient snack!

Ingredients:

2 medium sweet potatoes, peeled and grated
2 TBLS coconut oil, melted
1.5 tsp organic cinnamon
1/4 cup organic ground flaxseed meal
1/2 tsp salt

Instructions:

  1. Preheat oven to 400 degrees
  2. Mix all ingredients in a large bowl until sweet potatoes are evenly coated
    1. This will be messy!
  3. Form small-bite size patties (1-2 inches in diamater)
  4. Line a baking sheet with parchment paper.
  5. Place hash bites on parchment paper and cook 30-40 minutes until desired crispiness or cooked through
  6. Flip half way through the baking process

Storage: Refrigerate 4-5 days in airtight container
