3 Easy & Healthy Summer Dinner Ideas that Kids will Love

Summer dinners should be quick, light, and delicious — and if your kids love them too, that’s a big win. These three recipes are packed with nutrients, simple to prep, and perfect for warm evenings when no one wants to be in the kitchen too long.

1. Chicken Taco Lettuce Wraps


Why kids love it: It’s hands-on, customizable, and tastes like tacos.

Ingredients:

  • 1 lb ground chicken or turkey
  • 1 tbsp taco seasoning (clean, low-sodium)
  • 1 head romaine or butter lettuce (for wraps)
  • Toppings: shredded cheese, avocado, cherry tomatoes, black beans, Greek yogurt

Instructions:

  1. Brown the chicken in a skillet with taco seasoning until fully cooked.
  2. Rinse and separate the lettuce leaves.
  3. Fill each lettuce wrap with meat and your favorite toppings.
  4. Let kids assemble their own — they love the build-your-own style!

2. Zucchini Noodle Pasta with Turkey Meatballs

Ingredients:

  • 2 medium zucchinis (spiralized into noodles)
  • 1 jar marinara sauce (no added sugar)
  • 1 lb ground turkey
  • 1 egg, 2 tbsp almond flour, salt, pepper, Italian herbs

Instructions:

  1. Mix turkey, egg, almond flour, and herbs. Form into mini meatballs.
  2. Bake at 375°F for 15–20 minutes or pan-fry until golden brown.
  3. Lightly sauté zucchini noodles in olive oil for 2–3 minutes.
  4. Add marinara sauce and top with warm meatballs.

3. Grilled Chicken & Rainbow Veggie Skewers


Why kids love it: Food on a stick is always a hit — especially when it’s colorful.
Why you’ll love it: Easy prep, grill-friendly, and bursting with summer flavor.


Ingredients:
  • 2 chicken breasts, cubed
  • Bell peppers (red, yellow, green), zucchini, cherry tomatoes
  • Olive oil, garlic powder, sea salt, lemon juice
  • Bamboo or metal skewers

Instructions:

  1. Toss chicken and veggies in olive oil, garlic powder, lemon juice, and sea salt.
